The Canalicchio di Sopra cellar, which moved to Casaccia in 1995, is an example of how tradition and innovation can come together.
It is a place where what the land gives must be exalted without modifying it: everything at Canalicchio di Sopra is organized to bring out the best in our Sangiovese starting from the vineyards to the cleanliness and uniqueness of our Cru.
The grapes, harvested from the vineyards around the cellar, are selected grape by grape. The fermentation takes place steel vats by controlling the temperature and with daily pumping over in order to extract elegance and character from the skins.
The mystic heart of the production is the ageing cellar where medium-sized Slavonian oak barrels quietly store our Sangiovese.
